Stir-fried Beef with Mustard Greens

3/4 lb boneless beef sirloin, partially frozen;         2 Tbls vegetable oil;       1/2 tsp mustard seeds;       1 lb mustard greens, washed, stems removed;       2 Tbls finely chopped green onion;        2 cloves garlic;        1 cup beef or chicken broth;        2 Tbls cornstarch;        2 Tbls soy sauce;       1 tsp sugar;         2 – 3 cups hot, cooked rice.

Thinly slice beef.  In wok or large skillet, heat 1 Tbls oil over medium high heat.  Add mustard seeds; cover and heat until seeds pop.  Add greens and stir-fry until tender.  Remove to bowl.  Heat remaining oil in wok.  Add beef, onion and garlic.  Stir-fry until meat is well – browned – about 3 minutes.  Remove to bowl with greens.  In small bowl, with wire whisk, stir together broth, cornstarch, soy sauce and sugar.  Add to wok; cook, stirring until thickened.  Stir in beef mixture and greens;  heat to boiling.  Serve with rice.  Try substituting marinated chicken for the beef or adding sliced ginger root into the meat, onion and garlic.  I use the sauce ingredients (broth, cornstarch, soy sauce, and sugar) whenever I make a stir-fry, no matter what the ingredients.
