Okra over Rice

A neighbor suggested this use for okra.  I tried it and my whole family – even the 16-year-old son who is picky about vegetables – liked it.

okra, topped and sliced                                 hot peppers, chopped

sweet frying peppers, sliced and seeded              onions, sliced

garlic, minced or smashed                            fresh tomatoes, sliced in half

olive oil                                                                  salt and pepper to taste

Place all the prepared vegetables in a large skillet with the olive oil.  Saute over a medium heat until the vegetables are soft.  When the tomatoes begin to soften, you can slip off the skins to remove them.   As the vegetables cook, they create a wonderful sauce which we serve over rice.   My daughter made a variation of this by sprinkling fried bacon over the top.  Delightful!
