Adding Value and Longevity to Last Year’s Garlic

The unsold garlic from last year’s harvest is beginning to sprout and wither and although we eat an awful lot of garlic, it seems unlikely that we will ever finish off the remaining 10lb bag of seconds before the new scapes come in.  Years ago, the farmer we bought our seed from suggested drying and making garlic powder out of the unsalable heads.  I decided this was the year to try it.  It was a rousing success!  The powder tastes absolutely phenomenal!  We sprinkle it on everything now (ok, almost everything ).  Here’s how easy it is to make:
